Paella Mixta


{Serves 6-10 people}

- Half chicken (cut into peices).
- 10.5 oz chopped pork ribs (cut into 1.5 inch pieces).
- 9 oz of chopped rabbit.
- 7 oz green beens cut in one inch pieces.
- 3-4 fresh artichoke hearts, sliced.
- 1 sliced red pepper (cut into strips).
- 6 Tbsp. of homemade tomato sauce.
- 1 lb 5 oz rice for Paella (arroz bomba).
- Salt & pepper.
- Chicken broth.
- Miquel’s Organic Olive Oil.


1. Add enough Miquel’s to generously cover the bottom of a paella pan.
2. Add the red pepper and a pinch of salt. Cook until tender, then remove from pan and set aside.
3. In the same oil, add the meat (chicken, pork and rabbit) and salt and pepper and cook until done.
4. Add the tomato sauce and the green beans. Stir until the mixture becomes golden.
5. Add the rice and cook for a couple of minutes
6. Add the artichokes
7. Add boiling chicken broth. For every cup of rice you add two and a half cups of broth. (Have extra chicken broth close at hand so you can add when necessary)
8. Add red peppers on top of the rice
9. Cook for 15 minutes using medium heat
10. Cover the paella with a clean cloth (or newspaper) and let it cool for 6-8 minutes before serving.
