Paella Mixta Recipe

Miquel's Paella Mixta
It's all about the 'Sofrito'!

Ingredients:

  • 1kg of ‘Arroz Bomba’
  • 4 chicken thighs skinned and cut into pieces (1.5 inches approx)
  • 750 grams of pork ribs cut into small pieces (1.5 inches approx)
  • 250 grams of shrimp (whole)
  • 250 grams of squid cut into small pieces
  • 1 red pepper cut into strips
  • 250 grams of green beans cut into squares
  • 1 kg of cleaned artichokes cut into 4 pieces
  • 3 liters of fish stock/broth
  • 200 grams of natural tomato¬†sauce
  • salt and pepper to taste
  • Miquel’s olive oil!

Preparation:

  1. Add a generous amount of olive oil to coat the paella pan.
  2. Fry the red pepper with a pinch of salt and pepper and then remove from the olive oil.
  3. In the same oil, fry the prawns and then remove them from the pan.
  4. In the same oil, fry the pork ribs about ten minutes until it begins to golden.
  5. Now add the chicken. Saute all very well for 10-15 minutes until golden.
  6. Add the Squid together with Green Beans.
  7. Continue stirring and add salt and pepper.
  8. When everything is golden brown, add the tomato sauce¬†and continue stirring all together until everything is¬†very golden (It is very important¬†that this mixture, also know as the ‘sofrito’ this very golden).
  9. Then you add in the Rice and Artichokes.
  10. Allow the Rice to cook ‘dry’ for several minutes while mixing all ingredients.
  11. Now add boiling fish stock to the paella pan.
  12. The rice ratio for this is as follows: for each cup of rice, add 2 cups of broth approx. (start with 2 cups of stock and then add additional stock needed).
  13. Cook for 2-3 minutes on high heat and then lowered for 10 minutes at mid heat.
  14. When there is only 5 minutes left on the step above, add the cooked pepper strips and shrimp on top of the rice).
  15. Add salt as needed
  16. Remove the pan from the heat and cover the entire paella with newspaper!
  17. Let it stand for 12-13 minutes so that the rice finishes itself¬†with it’s own own steam
  18. Remove the newspaper and let the paella stand for 5 minutes.
  19. Serve and to enjoy !!!!
